Mango,nut,raisin,coconut , etc..quinoa salad~

This lovely quinoa salad is delicious.
I sound like a real estate agent describing a home..:"This lovely home is charming.."~
Anyways it doesn't need a little TLC..it just needs you to make it and enjoy it;)
You have to like sweet.I changed up the recipe because the recipe was just too large amount wise for Jacques and I..
I used 1/2 cup dry regular quinoa to 1 cup broth..and proceeded to amend the quantities of the other ingredients..
I used 1/2 mango..a handful of raisins etc..all according to taste.
I must say it is wonderful..the edamame stay slightly crunchy..the coconut is refreshing,the slightly toasted almonds..very good.You could add spinach too..
I have made it full recipe too since then..and added  CHICKPEAS..Yum!

It's so different..Frédérick gave me seeds he had saved.. they came from a friend..from her mom in Italy..supposed to be a perennial..unfortunately F had to do away with the garden that his spinach was in..for access to start cutting an 800 yr old tree down.

But it HAD started growing I saw it with my own eyes..and last night he told me it had come back in another place he had it in..Imagine.

I am hoping mine will come back but want to save seeds..have to find out when.So different from our reg.spinach..that too..I pick off pieces and chew :)Look at it healthy..sturdy gorgeous..It's getting leggy now..but not ugly so.





I found the recipe here..  for that great quinoa salad..I think it is a copy cat Whole Foods..Marie ..again I apologize for the heavy quinoa laden post;)
I always think of you now when I make my quinoa salads..
It's a keeper and so easy.I eat it as a meal..Jacques adds  a meli-melo of other things on his plate..some of his charcuterie..some cheese..tomatoes..broccoli..
I find I don't want to taste anything else but this:)

The scenery is changing quite quickly here..I have transplanted a few things..but we are in for a heat wave..so I'll pause now for a few days..and continue with the garden transplanting in cooler weather:)
The Littles are back in school today..they have their wishes of which teachers they would like..I hope they get the one they want:)

Noah's mom is already back in the swing of things ..making his lunch napkins..for the week;)



September always feels like a new year to me..I guess because of school..and then being a realtor all those years..things always geared up come September..after the summer holidays..
Let's all have a good new year ~
Shhh...because tomorrow..IS September first....

  3. Pretty, pretty salad. I love quinoa too, especially in salads or broth bowls. Delish! This one sounds like a winner. Our boys don't start school until after Labor Day along with most of the schools here. I think the private (religious) schools have already started as I saw the playground of a nearby Lutheran school filled with children last Friday. Such a strong opinion for such a little girl. Quite a vocabulary too:) M shares some of your artistic talent. I love those napkins she makes! September 1st - Waaaaah!!!

      Here we no longer are governed by religious school boards..except in some cases..I am only mentioning Catholic and Protestant..

      Here it was always the way..I went to catholic school..and our girls also..

      now they are linguistic..in our region..French and English..yet both teach the other as a second language..
      Mylène teaches French to kindergarden...which IMHO is the beginning of everything..many English children arriving knowing not one word of French..by the end..most are bilingual..K! Imagine..those little brains are sponges♥

      PS WAY back when..I went to French Catholic..my childhood friend Jo..went to English Catholic..I envied her V-Neck tunic..compared to my box pleats..w/ a belt..when you are an overweight child..box pleats AND a belt... and gym class are your worst enemies.

  4. As I sit down for a few moments while packing up the house, I am eating Frito chips for lunch. Sure wish I had the salad instead. This moving is the worst thing I have done in many years. Hope you'll hear from me again as I'm not so sure I'll make it through this.

  5. Your quinoa salad sounds divine Monique. Years ago when I first heard of quinoa, I looked and looked for it to no avail. I guess I forgot about it because of that. Now I've fallen in love with it. I made a salad last spring with red quinoa and realized why everyone loves quinoa so much. I'm glad you figured out why September seems like a new year. I feel the same way.

    I just had quinoa for the first time a couple weeks ago. I liked it, but it took much longer to cook than I'd expected. It was done when we were halfway through our meal. A learning experience. :)

    You know I love her napkins. Such love there.

    I love spinach too. If we ever get together, I vote for a meal that includes quinoa, spinach, "real"/garden tomatoes, and CAKE! :) ♥

      I was lucky enough to see how my daughter made it..well the resting period..before she added the salad ings..yet the first time I made it..mush.

      Now ..it is always just right like rice..I like the little quinoas..to not be all toghere? Light and fluffy like rice..in a way..
      Takes about 20 mins for the full cup to 2 cups ratio..Boil the stock..add quinoa..quick stir..cover..(mine has a hole)..reduce to lowest ..and ap 20 mins:)

  7. I have to try quinoa, maybe this salad will entice me. I didn't know there was different colors. The napkins are so sweet. Imagine opening your lunch and finding these works of art from your mom. She is quite the artist like her mom. Perennial spinach? How interesting. You will need to let some flower and then go to seed to get any seed to save. Or maybe you could take a cutting and see if it roots like coleus does. I wonder if you could dig some up and put in your cold porch over winter and replant next spring in the garden?

I read up on it last night..I gathered seeds that were green yesterday..Fred told me his eeds had been green..and last night in bed Googled..it is actually New Zealand Spinach..one of the names for it and as I saw..the seeds drop..it actually reseeds..the video I saw was from Californi the thing grew huge..of course here..it grows until frost so you don't get that voluminous growth..it was gargantuan .I'll wilt some in evoo w/ my garlic and a touch of salt to top pizzas tonight:)

  10. That was one adamant little girl! Oh, I LOVE this salad! I have just discovered I like quinoa after all - it just has to be the right kind. And also discovered granola and yogurt for brekkie, instead of eggs, which has been my usual breakfast forever. And those napkins , pure love and so sweet. Hope your day is wonderful, Nana!

    We had a wonderful Quinoa and Mango salad the other day for lunch that my friend made. I couldn't get enough of it! Wish there was always someone willing to make me a lunch salad.

  16. An 800 year old tree? Now that's a tree! And this spinach. I need to find that. But that hydrangea shot? I want a bunch of those! And as for the new year? I always felt the same. But being Jewish, I do get to have a new year every September. Makes me feel like i get a second chance at those resolutions!

    1. Abbe I tend to.. make trees older than they are..certainly 100 yrs though:)The spinach..New Zealand.. get your hand on some seeds..the video..depending on your climate..well it could grow all yr!
      That hydrangea is Annabelle..most turn white..a few stay green.
      Made your sald ..I iked cooking the potatoes in the micro..fuss free!

      True to form the boys opted for chips..we ate the salad...very good..will have to try with the real Old Bay too..to see the difference:)

  17. I will have to try the salad, but with rice or some other grain. ;-) I am sure it is delicious! You are having a heat wave but we are cold and dismal. Blah! Love the napkins. I used to do the same thing for my babies. I really enjoyed doing it. I am not sure if they remember. Perhaps they do. September always feels like the beginning of the year to me also, probably because of school. It is so cute to see the wee ones going back. Over here they wear uniforms. So sweet.     Have always thought your daughter's idea of including such adorable notes in lunchboxes is clever and loving. Bet the Noah loves them too.
    Am not a quinoa-lover! Have tried and tried. But the more ingredients the better as I would barely realize the quinoa is in there! :) Mangoes are fab right now. My daughter had some every morning on her recent visit.

    1. It has to be cooked right..if I had only tasted my first trial and not my daughters first..I would have hated it Pam.It can't be mushy..

      You eat so healthily it would be wonderful w/ the fish dishes you make.
      I do prefer it 100% in salads..not hot.
