I don't think we had roasted peppers in at least 3 yrs..pre covid..
And we had none left ..for a long while..
So we went to my fave market in Mtl..
and bought a bushel of peppers.
An oil bath with garlic and basil is prepared..and the peppers are prepped..Halved..seeded etc..
then placed on the grill to roast for ap 20-25 mins..
Once nice and charred they are put in a bag for a further 20-25 minutes..The skin comes off so easily afterwards.
Into the EVOO bath they go..layer upon layer..to be turned occasionally during the process..That bath infuses the already delicious roasted peppers with garlic and basil.
Ap 4 hrs later they are bagged and frozen..
Ap 13.4 lbs.

Ive put a lot of the gardens to bed..
Feels good...even the zinnias and calendula..nasturtiums..marigolds are still pretty..only kept the calendula..
The bees love them so why rush.
I had ordered a special cookie cutter /stamp for 2 of my grandsons football team.
Perfect design.I was more excited than the boys tbh:)The cookies were a hit ..the stamp was ..oh where did you get that? LOL

DeleteThe fall colors in your photography are so perfect! To me, those roasted pepper appear to be a bit of work but in the end so worth it. I can relate to your cookie stamp story. Here in Illinois it has been an Indian summer with warm temps & sunny skies.I wish you the same.

DeleteAh Monique, you had me at "...a bushel of peppers." It was a bit of work for you, but oh my, what a treasure you have. I guess that's why so many of us "put up" foods by freezing and canning. It's a good feeling to know that we have really delicious treats to look forward to.

Thank you for visiting:) And Pam I could not think of a better recipe to start stamping with! At this time of yr..Home Goods..Marshall's often have rubber stamps with wood handles with crisp clear impressions..but honestly they are so popular you can literally get them anywhere even on Amazon:)
ReplyDeleteOne thing to be careful of are the embossed rolling pins..not so reputable companies sell cute ones..but the etching is not deep enough so no matter how good you are at stamping..the impressions vanish( Nordic Ware has great cookie stamps too..but you really do not have to break the bank:)Have a very good week!

DeleteA delicious labor of love! If my J enjoyed peppers I would do the same. I did char and freeze my poblanos though. In Tex Mex recipes he doesn't know the difference as they are mostly blended into sauces - LOL. The team stamp is wonderful!! What a great find! After doing some reading, I've decided to wait another week to dig out my dahlia tubers. Everything else is pulled and all the containers are emptied and wash. It feels good to have so much completed, doesn't it? ♥♥♥
ReplyDeleteIt does..but every time I turn around lol more todo..and the leaves ..oh the leaves just keep falllling of course:) Yes I dug mine to early..maybe it will be ..To Costco lol this Spring if I feel like it..they were my best..If I didn't garden I would not exercise half as much..Its not easy right? All the boys won their games this weekend..no injuries:)xx
DeleteGardening is wonderful exercise with all the bending, pulling and lifting! I like to try at least one new dahlia each year. This year it was American Dawn (which I don't think was labeled accurately because it didn't really look like the photos I saw). I think I'm going to give up my space for 4 o'clocks for zinnias next year and find a new place for 4 o'clocks. I love them but they seem to only bloom in the early mornings here. Always fun to plan for next year ♥. So glad to hear about the boys' games! Whew!!
