Eddie's Almond Roll Again~
Just because..we enjoy it so much ..in case you missed it the first time around..and the first time..I didn't have the sweet butterflies I saw at la Casserole Carrée..that beautiful food blog I have raved about..She didn't use them on this dessert but I thought they would work~You toast the almonds and make a little melted chocolate body on wax paper stick the wings in and there you have them..I scattered some on the cake pedestal..I don't know if that is how Mme.Carrée made hers..It's my take.
It's like a cookie cake:)
It could even work for Easter..

But it's lovelier as a tea time treat I think..This is a keeper recipe:)

But truth is..Eddie was a dear friend of my first adult life manager's....She was an amazing manager.. and I considered her a mentor.When she passed her son had a celebration of her life at her home..my husband and I were invited..one of the desserts served was this..lovingly made by her friend Eddie..Eddie was gracious enough to call me shortly after with the recipe..I've not seen her since..But I remember that day..which was so loving.. every time I make it.
It's a sentimental dessert to me.:)
My husband always says it tastes like a fine pastry shop:)
I brought a piece to my friend.. w/ an individual butterfly on it..It really does make the little serving more of a special offering..

Monique, I had to come over and tell you that last night as I was falling asleep I pictured a white cabbage for the summer! Isn't that amazing that you had already made that and I love the idea of a baby tucked in the center. I will try that. Happy Easter to you too.
