This little oil is delicious~
First discovered at Zeste tv.. at L'Effet Vezina..
Simply bring your oil to a vibrant simmer and add two vanilla beans that you have scraped..
Let infuse and use..
I made his scallops.. served on a soup ,topped with a citrus reduction.. and drizzled this heavenly oil on top.. it is so different..it can be used in salads etc..
It is amazing how well the scallops sit and taste in soup..like a rich sauce.. this was my second try..not as pretty as the first as I had no citrus reduction on these and rutabaga was added to the soup..I prefer simply parsnip..I did not use his exact recipe..But use your favorite rich soup..and topped with scallops..Make a nice citrus reduction..add grapefruit segments..pink of course..and drizzle the oil~

We had watched the episode and it just appealed to me~

Bonjour Monique - this sounds delectable with the scallops on top - they would have to be my most favourite seafood. When I return to my sea-side home-town. I always order "devilled scallops" and enjoy every mouthful.

ReplyDeleteMy mother was so unlike Joni (my sister at Red Couch Recipes) and I. She didn't like parties, showers, anything like that. She didn't like Mother's Day because they always had speakers at church on Mother's DAy and she felt that her family never measured up. I told her that no family was perfect and that of course we speak about the best aspects when we honor Mothers on Mother's Day. I could never convince her. I think we all reacted to her and did the opposite, loving to entertain and embracing Mother's DAy. I am so glad too!
Have a wonderful Mother's Day dear friend. I know you love your roles too and I can just see the little ones as they run into your home! Hug them for me!!!

The vanilla oil sounds wonderful. I made seared scallops on celery root puree but putting them in a wonderful, thick soup sounds delightful topped with that lovely oil. What a beautiful meal!
ReplyDeleteVanilla oil! That sounds heavenly! Do like the look of that scallop soup as well. I can do this in a million ways... Instead of vanilla oil, I can probably drizzle a little whit truffle oil over it too.

OH, scallops are just amazing. My husband thinks he doesn't like them but I panfried some the other night and he really enjoyed them. This soup would be wonderful and he would like it too. It is just beautiful, especially the touch of oil!

oh my those scallops look so scrummy, i ordered jerusalem artichoke for my hubby once and he was not impressed i ordered it because we had been to jerusalem can you believe it ha ha!
