In the summer cold soups are perfect..and so many nutrients are in soups like Gazpacho..Tomatoes are wonderfully good for you~
And when your handsome,tanned,barefoot son-in -law drops it off.. made by him..
All the better~

Cause mine never tasted so good~
La Recette~
Ingredients
3 tomatoes, peeled
1 sweet red pepper, halved and seeded
1 green pepper, halved and seeded
1 English cucumber, peeled
2 garlic cloves, chopped
2 tbsp (25 mL) red wine vinegar
1 tbsp (15 mL) olive oil
3-1/2 cups (875 mL) vegetable cocktail, (approx)
1/4 tsp (1 mL) hot pepper sauce
1 pinch salt
1 pinch pepper
Garnish:
1 tbsp (15 mL) olive oil
1 clove garlic, minced
2 slices day-old bread, crusts removed
2 green onions
Preparation:
Halve tomatoes; scoop out seeds. Grip chef's knife with fingers meeting thumb underneath. With knife tip stationary and palm of other hand on top, coarsely chop 2 tomatoes, red pepper, half of green pepper and half of cucumber; set remaining vegetables aside.
In food processor, or in blender in batches, puree chopped tomatoes, sweet peppers, cucumber, garlic, vinegar and oil until smooth. Transfer to large bowl; stir in vegetable cocktail and hot pepper sauce.

I added parsley, tarragon and onions,cucumber and I used white balsamic vinegar and pink & white pepper.
Well now winter's at our doorstep in QC.. but so many other places can enjoy this soup :) I am thinking where it is always warm..or warm when we are cold..

ReplyDeleteI'm a nitpicker supreme, so I adjust my gazpacho depending on the quality of my tomatoes.
I think SIL's recipe sounds pretty darn good.
But, what really boggles the mind is, how you can still have fresh basil in November. I'm moving to Fairyland.

Monique, my husband makes the best Gazpacho. I'm not one who loves tomatoes, but a cup of this soup is often perfect for a hot summer day. When he makes it, he always shares with friends. I'll pass this recipe on to my "chef".

ReplyDeleteWe lived in La Jolla, CA when our children were born. After every OB appointment (and weigh in) I took myself to Cafe Lautrec and had a bowl of gazpacho followed by a warm brownie a la mode smothered in hot fudge sauce. Ah, thanks for the memories!

Where we are, we are not too crazy about cold soup. But if a handsome son in law were to make and deliver it, I wouldn't mind taking it!

ReplyDeleteWe are both blessed to have son-in-laws who love to cook :) Sadly, mine lives just a tad too far away to be dropping off soup at my door but I've enjoyed many a good meal at their home.

J'adore le gaspachio. Dès que mon basilic a une bonne consistance dans mon jardin, je fais régulièrement cette soupe froide... J'ai 4 enfants dont un qui est cuisinier (mais reconverti). Aucun ne me cuisine quoi que ce soit.. En revanche ils viennent dès qu'ils le peuvent pour déguster les plats de maman!
