A La Di Stasio~Omelet~



So easy to make..so easy to eat~
A beautifully puffed omelet from one of her recent shows~
I must admit I am "Inconsolable"..to have missed years of her episodes because we did not get her channel..Now I ..we ..are glued to the television on Fridays at 8 p.m..



You simply take 2 egg whites and beat them quite stiffly..fold in your 2 egg yolks..some salt and pepper..

and set the mixture in a non stick prepared skillet.. your egg mixture should fill the diameter of your skillet...on medium heat until you see the mixture begin to take underneath.. add cheese..(goat..or whatever soft cheese you like) ..herbs.. etc..

Place under the grill until done..remove and fold..Plate~

Success every time..it's like a soufflomelet~♥
She's my favorite show..~Ok one of my favorites..Ricardo ..too:)

The omelet is gorgeous when it comes out of the oven..

  9. A La Di Stasio~ Friday nights..used to be PM..now 9 PM..There are also DVDs of her in France and Tuscany..

    Tuscany was featured on last Fridays show..

    She is intelligent,bright and vivacious..Not fluff:)..The true thing:)

  10. I just made a cheesy omelete for my daughter ... she wanted a supper snack before bed. I should have read your post earlier. Now I know the secret to making fluffy soufflomelete. :) I love that word already.

  11. Oh Monique,
    I'm going to try this easy looking recipe, to impress my hubby. He is the real chef of the family, and I always take a back seat to him in the kitchen. ;) Although, he can't take a spoon to my baking! He is the improvisor who never writes down his own recipes, or follows anyone elses. I excel at baking, for exactly the opposite reasons. Anyway, glad to see this recipe to use some of the fresh farm eggs we just purchased at a local farm.

  20. That's how it's often done in restaurants so the whole thing is cooked and not overdone on the bottom to cook the top properly. Great job with it and I love the photos... what magical light!
