Chayote Anyone?~



This salad tickled my fancy when I spotted it at Nooshi

And I quote.."My little grandma, who refuses to eat anything but Chinese food, even wrote down the recipe. That says a lot! Now go and try it for yourself."

How could I resist!?



I doubled the dressing recipe..Because I made quite a bit ..my mango was huge..my pepper too..
I inadvertently thought I had mixed beans..they were mixed chickpeas..I like the recipe to make it again..so next time I will do it right:)

I had never had Chayotes

So that was another reason to give this a try..It's my side dish with fish ..the air is crisp and clean..the sky is blue..Perfect! Thanks Nooshi~

  2. Very interesting, Monique. I've had chayote many times in Mexican food but have never prepared it myself.

    This recipe looks so good, healthy and light and lots of flavors. I must try it.

  8. Chayotes...I have never had this either...I must say, the bowls are adorable and I love how you will use what is on hand when the real ingredient is not at home!!! Makes me feel better since I do that ALL the time.Lol...I'm in the process of passing a kidney stone... If any of this sounds off, I'm blaming the drugs!!! xoxo~Kathy~ @ Sweet Up-North Mornings...

  10. Well what a surprise, we call Chayotes, Chokos and they grow like a weed here in Australia. Not a popular vegetable at all, really just something your grandad probbly grew and you wouldn't want to. Never heard of them being eaten raw before, always boiled and absolutely tasteless. I don't think you would even find them sold in the supermarket very often here as they are so old fashioned, its like brussel sprouts here not popular at all. So I love that you have found a recipe for them raw and in salad I am amazed. I love this blogging community so many cool new ideas.

  13. I'm in the majority here and have never had chayotes either...I love discovering new foods. I like the idea of chickpeas also, since I almost always have them on hand.

  14. I am happy w/ Chayotes.. crunchy crunchy.. They are a bit like an apple/pear but the tatse is much more subdued..It adds texture and loads of crunch and they are good for you.
    I am happy I learned about them also..I will keep buying them..
    Thanks for liking the bowl..It was made very weathered and I liked it on the spot too..Now..it could have said Nana..and I would have loved it even more..:)
