My Daughter's Muffins~



Oh she cracked me up~ She is due to have Ollie last week.. really next week..but the hospital told her to pack her bags more than 1 week ago:)

She came over today with a plate of muffins in hand~




That were so delectable I ate one on the spot:)

She said when she was making them w/ Lulu that am.. she thought well I can always bring them to the hospital and offer the guests these:)
She just made me laugh..

They are really good..dangerously good:)

I said Oh you must send me this recipe.."I love them"..

Guess what?
No surprise..

Here it is..


Blueberry Sour Cream Muffins

1 1/2 cups flour
3/4 cup sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 cup oil
1 egg
1/3 cup milk
1 tsp. vanilla
1/2 cup sour cream
1 cup blueberries
streusel topping * recipe to follow
Stir together flour, sugar, salt and baking powder.
In a separate bowl mix oil, egg, milk and vanilla. Stir into flour mixture. Add sour cream and stir until combined. Fold in blueberries.
Spoon batter into 12 greased or paper lined muffin cups. Sprinkle generously with streusel topping and bake at 400 for 20 min.
Makes: 12 muffins

Streusel Topping

1/3 cup flour
1/4 cup sugar
1/2 tsp. cinnamon
pinch nutmeg
2 Tbsp. butter
Mix together flour, sugar, cinnamon and nutmeg. Stir in butter until evenly coated.
Makes enough for 12 muffins






PS..My daughter added oats to the topping.. I love oats..so I agree:)

They really were the best blueberry muffins I ever tasted..
Time flies!! One year ago today I went on my memorable trip to Europe.

  9. I have a favorite blueberry recipe very similar to this one...will love trying this and compare. Oats in the topping great idea. Congrats on your anniversary...bet you wish you were going again!!! Put your daughter in a truck and go ride down some bumpy roads...worked for me!!! xoxo~Kathy....wait a minute...I've been trying to pass a kidney stone for two days, maybe the truck thing would work for this too!!! Ha! worth a try...

  17. Such anticipation! I would be a wreck! She is clearly her "Mother's Daughter" to bake at a time like this. Come to think of it - I baked a rice pudding and ate the entire thing right before I went into labor. Long ago of course!
