Terrine~

I'm afraid I now love these more than my husband does~



When I saw the photo..again I knew I had to make it~The recipe was simple and her blog so appetizing!

My end result was to me delicious~


I have a new husband:) That eats less and less.. So even half portions are more than enough..






La Recette ... for a 17cmx10cmx5 cm dish.


Terrine..


6 tbsps Cognac..good quality..or Port or Armagnac
450 g chicken livers
1 tsp ginger
1 tsp cumin
1/2 tsp coriander(I omitted)
5 generous pinches of nutmeg

all the above spices are dry.



8 dried apricots rehydrated in warm water and chopped
6 dried figs chopped
1 glass warm water
50 gr hazelnuts chopped
50 gr unsalted pistachios chopped

270 ml cream
4 eggs
1 tsp ginger
1 tsp cumin
6-8 pinches nutmeg

salt, green peppercorns

Rinse the chicken livers.. let drain on paper towels.
Mix marinade and livers and refrigerate overnight.

I used a food processor to process the livers and spices..added the cream and nuts and fruits by hand mixing.

I poured into a terrine dish..

and baked in a 350 degree oven bain- marie style.. covered for 70 mins.
I uncovered for 10 additional minutes to lightly brown the top.

There is a note that says somewhere..Ideal for picnics! I agree! A beautiful baguette.. the great "osier"(wicker) basket(I am so lucky to have my mom's).. a lovely blanket to sit on..:)

One of my daughters has 2 boys..a third on the way..

I have never met a family that does as many picnics.
On weekends.. the whole family.
I love that.
A few weeks ago..I popped by and said wow your grass looks amazing!

She said we paid two young men :)

It was either a picnic w/ the boys or stay home and mow the lawn.~


I am afraid I stayed home way to often to do what should be done.
Next life..I am going on more picnics:)



I think I'll experiment with more terrines this summer~

  2. Oh my, this looks wonderful. I know I couldn't leave it alone and would probably polish off the entire recipe along with a whole baguette. No will power here.
