Babysitting~101



It gets you going early in the morning~
I knew I had to be home this am..for Noah..I got started early w/ our menu..I had Jacques take out that great Italian Sausage sauce I made a batch of..:)One container.. and planned on home made pasta w/ my new Italian flour from Little Italy..



I did learn a lesson or 2 or 3... today..apart from.. #1..let your pasta dry out perfectly before wrapping it..#2... 9 month old little boys who can stand up and walk around furniture and crawl at the speed of light need 100% of our attention:)(So funny and cute!)
The first lesson led to this thought:)
Have your husband build you a pasta drying rack after golfing all day:)

That's on the list now..



The pasta was too moist..not dry like the last time I made it ..and let it dry hanging over my rolling pins~

It was.. nevertheless very good thanks to the great Ricardo/Liza Frulla sauce..





And Jacques' homegrown indoor "light" basil:)



I also learned..#3 that Tiger lilies..wild.. in my forest w/ the Fiddleheads..are delectably delish in salads~



I saw this on TV.. which I never watch in the morning.unless babysitting a 9 month old:)

La recette..


Sauce à spaghetti à la tomate et à la saucisse de Liza Frulla

Ingrédients
• 50 ml (1/4 d’huile d’olive)~ 1/4 cup evoo
• 1 petit oignon rouge haché finement~ 1 small chopped red onion
• 4 ou 5 gousses d’ail écrasées et hachées finement~4-5 garlic cloves chopped finely
• 500 gr (1 lb) de saucisses italiennes (fortes et douces en parts égales)~1lb spicy and mild italian sausage equal parts chopped
• 500 gr (1 lb) de bœuf haché maigre (ou autre sorte de viande hachée)~1lb lean minced beef
• 796 ml (28 oz) de tomates Pastene avec pâte de tomate déjà ajoutée~Pastene tomatoes w/ tomato paste added
• 796 ml (28 oz) de tomates en morceaux assaisonnées à l’italienne~Tomato chunks w/ italian seasoning added
• 750 ml (24 oz) de jus de tomate~Tomato Juice
• 50 ml (1/4 de tasse) d’eau~ 1/4 cup Water
• 30 ml (2 c. à soupe) d’épices italiennes de bonne qualité, séchées ou conservées dans l’huile (en vente dans les épiceries spécialisées)~(2Tbsps) Italian seasonings packed in oil..or dry..but good quality.
• Sel et poivre noir~ Salt and black pepper
• Persil frais~ fresh parsley
• Basilic frais~ Fresh Basil
• 15 ml (1 c. à thé) de sucre ~Tsp of sugar

Préparation
Dans une grande marmite, de préférence en fonte (de type Le Creuset), faire revenir l’oignon et l’ail dans l’huile d’olive à feu assez vif (attention de ne pas trop brunir l’ail parce que cela donne un goût amer).
In a large Le Creust ..sauté onion..garlic and Evoo..do not brown the garlic..

Ajouter les saucisses italiennes coupées en morceaux pour les faire brunir, puis la viande hachée en diminuant quelque peu l’intensité du feu.Add the sausages..then the meat..lowering the heat..

Incorporer enfin les tomates (qui pourront être broyées à l’aide d’un pilon à pomme de terre ou d’une moulinette à main), les épices italiennes, le jus de tomate, l’eau et le sucre.Then the tomatoes..(after passing them through the mill)..the spices..the tomato juice..the water and sugar..

J’y ajoute toujours un zeste de poésie, une pincée de passion et beaucoup d’amour.

Dès que ça commence à bouillir, diminuer à feu doux et cuire lentement à découvert pendant une heure et demie environ.Ajouter le persil et le basilic frais et assaisonner de sel et de poivre noir au goût.After it simmers until boiling.. simmer uncovered for at least 1.5 hrs.. add the basil and parsley and spices.. At serving time...Add Parmigiano..and Romano mixture:)and crusty italian bread..as a side~

Accompagner les pâtes d’un mélange de fromage romano et parmesan et servir avec un pain croûté italien.

The additional ingredients are poetry..passion..and a lot of love~:)

  1. Oh how I love babies. I have to content myself with "borrowing" my nieces and nephews for the time being. My kiddos are still in "Career Mode" - not quite ready to have little ones yet. I'll have to be patient. The pasta looks so beautiful - think I'll make it for dinner tonight. Good idea for the drying rack - let me know how that goes - my husband enjoys golf as well.

    Nine months is a wonderful age, and yes, you can never take your eyes off of them. It sounds like a perfect day.

  4. There is nothing like homemade pasta, it just calls out family and comfort to me. And that salad looks wonderfully delicious and fresh, what a great idea to add the lilies!

    The first time I made homemade pasta I knew I needed a drying rack also!
